
SCAMPI ALLA GRIGLIA
(Shrimp with garlic butter)
2 lb. Iarge fresh shrimp
1/4 lb. butter
1/4 cup olive oil
1 tbsp. Iemon juice
1/4 cup finely chopped shallots or scallions
1 tbsp. finely chopped garlic
1/4 tsp. thyme
1/4 tsp. oregano
1 tsp. salt
Freshly ground black pepper
1/4 cup finely chopped parsley (preferably flat leaf Itaiian parsley)

Shell and devein shrimp. In shallow, flameproof
baking dish large enough to hold shrimp
in one layer, melt butter. Stir in remaining
ingredients except parsley and lemon. Add
shrimp and turn to coat well. Broil until lightly
browned and firm, turning once (about 3-4
minutes per side). Transfer to heated serving
platter. Pour cooking juices over. Sprinkle with
parsley and garnish with lemon wedges.
