
Peking Chicken Wings
1/2 c. soy sauce
1/4 c. dry sherry
1/3 c. hoisin sauce
6 scallions, finely chopped
2 garlic cloves, minced
1/4 c. cider vinegar
1/2 c. honey
1/4 c. orange marmalade
1 tsp orange zest
1 tsp lemon zest
2 Tbsp minced green bell pepper
1/8 tsp Tabasco
4 pounds chicken wings
Stir together soy sauce, sherry, hoisin sauce, scallions, garlic,
vinegar, honey, marmalade, the zests, bell pepper, and the tobasco.
Add the chicken wings, stirring well to coat them with the marinade.
Marinate them for 4 hours or overnight. Place the wings on a rack
on a baking pan, reserving the marinade. Bake them at 375 degrees
for one hour, basting them every 20 minutes with the marinade.
