
Garlic Shrimp
1 tsp. olive oil
4 cloves garlic, minced
2 tbsp. dry vermouth
1 tsp. red pepper flakes (less if you don't want it spicy)
2 tsp. paprika
1 lb. fresh shrimp, peeled
1 tbsp. lemon juice
1/4 cup chopped fresh parsley
Lemon wedges
Combine oil and garlic in 10-inch
pie plate. Microwave on High 1 to 2
minutes or until tender. Stir in vermouth,
red pepper flakes and paprika. Add shrimp
and turn to coat evenly. Sprinkle with lemon juice.
Cover with plastic wrap, turned
back slightly, and microwave on
High 3 minutes. Stir.
Cover again and microwave on
High 1 to 3 minutes more, or until
shrimp have turned pink. Sprinkle
with parsley and serve with lemon
wedges. Makes four servings.
