
Cheesy Meat Roll
2 eggs, beaten
3/4 cup bread crumbs
1/2 cup tomato juice
2 Tbsp snipped parsley
1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper
1 clove garlic, minced
2 lb. lean ground beef
8 thin slices boiled ham
6 oz. mozzarella cheese, shredded
3 slices mozzarella cheese, halved diagonally
Combine eggs, crumbs, juice, parsley, oregano, salt,
pepper and garlic. Add beef and mix well. On wax
paper, pat meat mixture to a 12- by 10-inch rectangle.
Arrange ham atop meat, leaving a small margin around
edges. Sprinkle shredded cheese over ham. Starting
from short end, carefully roll up meat, using paper
to lift. Seal edges and ends. Place roll, seam side down,
in a 9- by 13-inch baking pan. Bake at 350 degrees
for 1-1/4 hours. Place cheese wedges on top of roll.
Return to oven until cheese melts, about 5 minutes.
