
Rice and Beef Porcupines
1 pound lean ground beef
1 teaspoon salt
3 tablespoons finely chopped yellow onion
1/2 teaspoon dried oregano crumbled
1/4 teaspoon dried rosemary crumbled
1/2 cup uncooked rice 2 tablespoons vegetable oil
2 cans (8 ounces each) tomato sauce
1 cup water
1. In a large bowl combine the beef, salt, onion oregano,
rosemary, and rice. Shape the mixture into 1-1/2-inch balls.
2. Heat the oil in a heavy 12-inch skillet over moderately
low heat for about 1 minute. Cook the meatballs uncovered,
turning frequently, until browned on all sides, about 5 minutes.
3. Add the tomato sauce and water, cover and simmer for
30 minutes. Serve with a green salad and crusty Italian bread.
