
Hamburgers Diane
1 pound lean ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon dried rosemary, crumbled
2 tablespoons butter or margarine
1 tablespoon vegetable oil
1 tablespoon Dijon or prepared spicy brown mustard
1 tablespoon lemon juice
1-1/2 teaspoons Worcestershire sauce
2 tablespoons chopped parsley
1. In a large bowl, combine the beef, salt, pepper, thyme,
and rosemary. Shape the mixture into 4 patties, each about
1 inch thick.
2. Heat 1 tablespoon of the butter with the oil and mustard
in a heavy 12-inch skillet over moderate heat for about 1 minute.
Add the patties and cook, uncovered, 3 minutes on each side
for rare, 4 minutes for medium, and 6 for well done. Remove
the patties to a warm platter.
3. Add the lemon juice and worcestershre sauce to the skillet,
and stir for 30 seconds. Remove the skillet from the heat, and
stir in the parsley and the remaining butter. Pour the sauce
over the patties.
