
Citrus Pecans
A California version of the praline, these are popular with
guests who have a sweet tooth.
3 cups sugar
1 cup water
4 cups whole pecans
1/2 cup grated orange rind, or a combination of orange and
lemon rind
1. Combine the sugar and water in a saucepan. Stir over low heat
until the sugar dissolves. Increase the heat to medium high,
bring to a boil, and continue cooking, without stirring, until
the temperature reaches 240 degrees on a candy thermometer.
2. Remove from the heat and stir in the pecans and orange rind.
Stir until the syrup becomes cloudy. Quickly turn the mixture
out onto wax paper. Separate into clusters or individual nuts
before they are completely hardened. Store in an airtight
container.
