
Watercress and Orange Salad with Dining Car Dressing
1 large bunch of watercress
2 large oranges, peeled and sliced
1/4 cup vegetable oil
1 tablespoon cider vinegar
1/2 teaspoon paprika
1/2 teaspoon sugar
1/4 teaspoon Worcestershire sauce
1/8 teaspoon powdered mustard
1/8 teaspoon freshly ground pepper
1 1/2 tablespoons chopped dates
1. Arrange the watercress on a large platter or on four individual
serving plates. Place the orange slices on the watercress.
2. In a small bowl, combine the oil, vinegar, paprika, sugar,
Worcestershire sauce, mustard and pepper and whisk until thoroughly
blended.
3. Pour the dressing over the salad and sprinkle the dates evenly on top.
